Description
The evaporation process of α,α-trehalose and sucrose aqueous solutions were investigated by FT-IR ATR spectroscopy. The hydration number of α,α-trehalose and sucrose were measured by the temporal molar ratio (water/trehalose and water/sucrose) change and the temporal wavenumber shifts of glycosidic linkage.
